     In all my time working in Panama, one thing that I absolutely loved was the Panamanian style habañero, or '"Aji Chombo" hot sauce.  I love hot sauce, and the Caribbean influenced Panamanian style is some of my favorite. I found myself missing it at home, so I started making my own with ingredients from my garden. Soon I started making enough to give away to friends and family, until I was getting common requests for more. It was then that I decided to rename my homemade sauce "Oncilla Sauce" and use it as a way to raise money for Oncilla research and conservation in Panama. 

     Oncilla Sauce is Panamanian style, Caribbean habañero hot sauce freshly made from mostly (peppers, onions, garlic, carrots) produce grown in my garden in Logan, Utah.
